With today's fast-paced world, finding time to tenderize pata for a special Sunday lunch or dinner is almost impossible, let alone going to the market for some fresh seafood at five o'clock in the morning. Most of the time you'd rather be catching on some sleep or you're rushing to finish last week's workload before this week rolls in. Restaurants like Barrio Fiesta has made it possible for families to come together, sit down to a good meal of Filipino favorites like Crispy pata, paella, kare-kare and lumpia without mom breaking a sweat and without the kids fighting over who does the dishes afterwards.The brainchild of Sixta Evangelista-Ongpauco, Barrio Fiesta started it's humble beginnings as a small eatery in the Ongpauco ancestral home in Caloocan city during the 1950's. "Mama Chit" as she is affectionately called, soon transformed the small eatery into a full-blown fine dining restaurant by serving her specialty, the Kare-kare. A few years after, Barrio Fiesta unveiled a classic Filipino favorite, the original Crispy Pata. The two recipes became the backbone of the Barrio Fiesta menu, which also featured tried and tested Filipino dishes with Mama Chit's twists.
With the help of her eight children, Mama Chit expanded Barrio Fiesta into numerous branches across the Philippines and other countries, making Barrio Fiesta a household name.
